Black Bean Sweet Potato Chili: Hearty, One-Pot

Black bean and sweet potato chili embodies everything a weeknight dinner should be: simple to make, nutritionally complete, and bold in flavor without fussy technique. The natural sweetness of the sweet potato plays against the earthiness of black beans, while chili powder and cumin tie everything together. This is a dish that improves as it sits, making it the perfect candidate for batch cooking and freezing. Serve it plain, over rice, or topped with cornbread for a meal that feels generous without demanding much from the cook.

Ingredients

Serves 4 as a main. Total time: 35 minutes.

  • 15 ml olive oil
  • 1 large onion, diced
  • 30 g garlic, minced
  • 500 g sweet potato, peeled and cut into 1 cm cubes
  • 800 ml canned crushed tomatoes (one 800 ml can)
  • 400 g black beans, cooked (one 400 ml can, drained and rinsed)
  • 400 ml vegetable broth or water
  • 10 g chili powder
  • 5 g cumin powder
  • 3 g smoked paprika
  • 2 g dried oregano
  • 1 bay leaf
  • 5 g salt, or to taste
  • 2 g black pepper
  • 10 ml fresh lime juice
  • 5 g fresh cilantro, chopped (optional)

Method

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant, stirring constantly.
  3. Stir in chili powder, cumin, smoked paprika, dried oregano, salt, and black pepper. Cook for 30 seconds, stirring, to bloom the spices.
  4. Add diced sweet potato cubes and stir to coat with the spice mixture. Cook for 1 minute.
  5. Pour in crushed tomatoes and vegetable broth, scraping the bottom of the pot to release any browned bits. Add bay leaf and stir well.
  6. Bring the chili to a simmer over medium heat, then reduce heat to low and cook uncovered for 15 to 20 minutes, stirring occasionally, until the sweet potato is tender but not mushy.
  7. Drain and rinse the black beans, then add them to the pot. Stir well and simmer for another 5 minutes to heat the beans through.
  8. Remove from heat and stir in fresh lime juice. Taste and adjust seasonings, adding more salt, cumin, or chili powder as preferred. Remove bay leaf.
  9. Serve hot, garnished with fresh cilantro, avocado slices, diced onion, or vegan sour cream if desired.

Freezing and Serving Ideas

This chili keeps refrigerated for up to five days and freezes beautifully for up to three months. Reheat gently on the stove, adding water if the chili has thickened. Serve over steamed rice, quinoa, or with cornbread on the side. Top with avocado, fresh cilantro, sliced jalapeños, diced red onion, or vegan sour cream. For a heartier meal, serve in bowls with cooked grains and a green salad. The chili is naturally vegan and packed with plant-based protein and fiber.

Black bean and sweet potato chili reminds us that the most comforting meals are often the simplest. This is the kind of dinner that disappears from bowls and leaves everyone asking for seconds, making it worth every effort, however minimal.
