Shawarma exists in street stalls across the Middle East, meat spinning on a vertical spit for hours until the outside caramelizes and the inside stays juicy. Home cooks can't replicate that exact setup, but they can capture the essence: a bold spice marinade, high heat, and a final broil that creates crispy, caramelized edges. Ingredients

  • 60 ml lemon juice or lime juice
  • 8 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon sweet paprika
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Pita bread, tahini sauce, sliced tomatoes, cucumbers, and pickled turnips for serving

Method

  1. Combine olive oil, lemon juice, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cloves, cayenne if using, salt, and black pepper in a bowl. Stir until well combined.
  2. Place chicken thighs in a large bowl or zip-top bag. Pour the marinade over the chicken, ensuring every piece is coated. Cover and refrigerate for at least 1 hour, preferably overnight. This allows the spices to penetrate the meat completely.
  3. When ready to cook, preheat the oven to 425°F (220°C) with the oven rack positioned in the upper third. Line a large sheet pan with parchment paper or foil.
  4. Spread the marinated chicken in a single layer on the prepared sheet pan, spacing pieces so they roast rather than steam. Reserve any excess marinade.
  5. Roast for 25 to 30 minutes until the chicken is cooked through and the edges are beginning to caramelize. The internal temperature should reach 74°C.
  6. Turn on the broiler. Brush the top of each piece with reserved marinade and broil for 2 to 3 minutes until the edges are dark, crispy, and slightly charred. Watch carefully to prevent burning.
  7. Remove from the oven and let rest for 5 minutes. Slice or shred the chicken as preferred.
  8. Serve in warm pita with tahini sauce, sliced tomatoes, cucumbers, pickled turnips, and fresh herbs.

Tips and Storage

Marinating overnight produces better flavor penetration than 1 hour, but even 1 hour helps significantly. The key to home success is high oven heat and a hot broiler finish that mimics the browning of a vertical spit. Chicken shawarma keeps, refrigerated, for 3 days and can be used in salads, wraps, grain bowls, or eaten plain. Reheat gently in a 180°C oven for 8 to 10 minutes to restore moisture. The uncooked marinated chicken freezes well for up to 3 months.

Once you've made shawarma at home, the street vendor version becomes optional. Yours is faster, cheaper, and tastes exactly the way you want it. That's freedom.
