Vegan Banana Bread: Moist, No Eggs, No Dairy
Ripe bananas naturally replace eggs in this tender loaf. No specialized binders needed, just fruit, flour, and warmth.

The secret that bakers often overlook is that bananas are already doing the work of an egg replacer. Mashed ripe banana provides moisture, binds the batter, and reacts with baking soda to create steam that leavens the bread. This banana bread doesn't require egg replacement powders or specialized techniques, just ripe fruit and the confidence that the fruit itself is sufficient. The result is a tender crumb that stays moist for days, perfect for breakfast toasting or afternoon snacking.
Leavening in banana bread is elegantly simple. The Banana Diaries explains that mashed bananas provide both moisture and water that turns to steam during baking, serving as a primary leavening agent alongside baking soda. Veg Recipes of India notes that the low acidity in bananas is enough to react with baking soda and help the loaf rise, eliminating the need for additional acid or egg replacers. This technique works consistently because bananas are both a structural element and a chemical leavening partner.
This bread freezes beautifully whole or sliced, thawing quickly at room temperature. Make two loaves and stash one in the freezer for mornings that need something special but demand speed.
Ingredients
Makes 1 standard loaf (8-10 slices). Total time: 1 hour 15 minutes (mostly baking).
- 300 g ripe bananas, mashed (about 3 large bananas)
- 100 g all-purpose flour
- 50 g whole wheat flour (optional, or use all all-purpose)
- 5 g baking soda
- 2 g salt
- 1 g ground cinnamon
- Pinch of ground nutmeg
- 100 g coconut sugar or brown sugar
- 60 ml vegetable oil (or melted coconut oil)
- 30 ml unsweetened plant milk (any kind)
- 10 ml vanilla extract
- 50 g chopped walnuts or pecans (optional)
- 30 g vegan chocolate chips (optional)
Method
- Preheat oven to 175°C. Lightly oil or line a standard loaf pan (9 by 5 inches) with parchment paper.
- In a large bowl, whisk together all-purpose flour, whole wheat flour (if using), baking soda, salt, cinnamon, and nutmeg. Set aside.
- In another bowl, combine mashed bananas, coconut sugar, vegetable oil, plant milk, and vanilla extract. Stir until well combined; the mixture should be smooth with visible banana pieces still present.
- Make a well in the center of the dry ingredients. Pour the wet mixture into the well and fold together gently using a spatula or wooden spoon until just combined. Do not overmix; a few lumps of flour are fine. Overmixing develops gluten and results in a tough crumb.
- Fold in chopped nuts and chocolate chips if using.
- Pour batter into the prepared loaf pan, smoothing the top gently with a spatula. If desired, score a line down the center of the loaf for a more traditional appearance.
- Bake at 175°C for 50 to 60 minutes, until a toothpick inserted into the center comes out clean or with just a few moist crumbs (not wet batter). The top should be golden brown.
- Remove from oven and let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
Storage and Variations
This banana bread keeps at room temperature in an airtight container for up to three days, or refrigerated for up to one week. Freeze the cooled loaf whole or pre-sliced (wrapped well in plastic wrap, then foil) for up to three months. Thaw at room temperature for about an hour. For variation, add a tablespoon of almond butter (or any nut butter) to the wet mixture for richness, or swap half the sugar for mashed avocado for moisture and subtle earthiness. A few tablespoons of unsweetened cocoa powder transforms this into chocolate banana bread. Toast slices for breakfast with almond butter and jam, or eat plain as an afternoon snack.
This banana bread proves that vegan baking isn't about substitution but about understanding how ingredients work. Here, bananas are the star, and everything else simply supports their natural gifts.
