Cottage cheese's run as the internet's favourite high-protein staple has already survived several years and, by most industry counts, an actual supply shortage. Its latest form is the cottage cheese chip: spoonfuls of the cheese flattened thin and baked until crisp, standing in for a potato crisp at a fraction of the carbohydrate. A recipe published on 18 September set out specifically to nail down the method after watching creators, among them the TikTok account @the.brittney, turn "spoonfuls of cottage cheese into thin, crispy rounds with just a few seasonings and a hot oven." The same recipe was picked up in wider syndication within a day, a NewsBreak pickup of the piece confirming the trend had already moved beyond a single outlet's audience by the following morning.
What actually goes wrong with this recipe
Most failed versions of this chip come down to moisture. Cottage cheese is mostly water and curd, and anything that adds more liquid, a wet pesto, a splash of oil, an overly juicy topping, stops the chip drying out properly and leaves you with a soft, sad puddle rather than a crisp round. The fix is to keep every addition dry: a spoonable seasoning blend, a hard grated cheese, and nothing wet layered on top before it goes into the oven.
Ingredients, for about 16 chips
- 450g full-fat cottage cheese, well drained (2 cups)
- 2 tablespoons finely grated Parmesan
- 2 tablespoons everything bagel seasoning
- Nonstick cooking spray
Method
Heat the oven to 175C (350F) and line two baking trays with parchment paper, spraying lightly with nonstick spray. Drain the cottage cheese well in a fine sieve for a few minutes, pressing gently with the back of a spoon to remove excess liquid; skipping this step is the single biggest cause of chips that never crisp up.
Drop heaping teaspoons of the drained cottage cheese onto the lined trays, spacing them at least 5cm apart, then flatten each one with the back of a spoon into a thin, even round about the size of a large coin. Uneven thickness bakes unevenly, so take the extra thirty seconds per chip to flatten them properly.
Sprinkle each round with a little grated Parmesan and a generous pinch of everything bagel seasoning. Bake for 18 to 20 minutes, rotating the trays halfway through, until the edges are deeply golden and the chips look dry rather than glossy. Watch closely in the final few minutes, as the sugar and dairy solids can catch and burn quickly once they start browning.
Turn off the oven and leave the chips inside with the door slightly ajar for five more minutes; they firm up considerably as they cool, so a chip that still seems soft straight out of the oven is not necessarily underdone.
Two swaps
Swap the everything bagel seasoning for za'atar and a pinch of black pepper for a different flavour entirely, or for chilli flakes and smoked paprika if you want something closer to a spicy crisp. Low-fat cottage cheese works if that is what is in the fridge, but drain it even more thoroughly than the full-fat version, since it holds more water to begin with.
Storage
These are at their best within a couple of hours of baking, while still fully crisp. They keep in an airtight container at room temperature for up to two days, though the texture softens slightly; recrisp briefly in a low oven before serving if that happens.
