A Protein Bar Is Ultra-Processed. New Trial Data Says That May Not Be the Point
Protein-enriched processed foods produced higher satiety hormones and lower calorie intake than normal-protein versions of the same products. It complicates a classification a lot of advice now rests on.

A short-term study in young adults compared protein-enriched ultra-processed foods, things like protein puddings, bars and breads, against normal-protein versions of the same ultra-processed products. The protein-enriched arm produced higher levels of satiety hormones, lower calorie intake and higher total energy expenditure.
Both arms were ultra-processed. That is the finding that matters, and it sits awkwardly with how the category is now used in public advice.
What the study does and does not show
It shows that within a set of highly processed foods, protein content changed how much people ate and how full they felt. It was short term, it was small, and it measured intake and hormones rather than any long-term outcome.
It does not show that ultra-processed food is fine. The broader evidence base still associates higher intake of ultra-processed food with weight gain and with increased risk of obesity, cardiovascular disease, type 2 diabetes and all-cause mortality, and that association survives a lot of adjustment.
What it does is separate two things that get bundled together: the degree of industrial processing, and the nutritional composition of what comes out. NOVA, the classification behind most ultra-processed reporting, sorts on the first and is close to silent on the second.
The argument the field is actually having
Unpublished work presented at a nutrition conference this year compared diet quality against processing level directly, with a focus on whether components were plant derived. The question at issue is whether processing is doing independent damage, or whether it is mostly a marker for diets high in refined carbohydrate, salt, saturated fat and calorie density and low in fibre.
The answer changes what advice should say.
If processing is the causal agent, the instruction is to reduce processed food regardless of what is in it. If processing is largely a proxy, then a protein-fortified, fibre-containing, low-sugar processed product may behave quite differently from a biscuit, and telling people to avoid both equally is telling them something untrue.
The current state of evidence is genuinely unresolved, which is why serious commentary has become more careful. We set out the trial evidence and the criticisms of the classification in what the ultra-processed research actually shows.
Where this leaves a shopper
Somewhere more practical than the debate suggests.
- Protein content is a real lever on appetite. That is one of the most consistently replicated findings in nutrition, and this trial is another instance of it rather than a surprise.
- A fortified product is not automatically a good one. Many protein bars carry the sugar and calorie load of confectionery with a protein claim on the front. The claim is accurate and the product is still a sweet.
- Whole-food protein remains the cheaper and better-evidenced route. Eggs, dairy, pulses, fish and meat deliver the same satiety effect without requiring anyone to adjudicate a classification argument.
- Fortified products earn their place as substitutes, not additions. A protein pudding instead of a dessert is a different decision from a protein pudding on top of one.

Why the category still deserves suspicion
Because the strongest evidence against ultra-processed food is not about nutrients at all. The most rigorous controlled feeding trial in this area matched diets for calories, sugar, fat, fibre and salt, and people still ate substantially more on the ultra-processed diet.
Something about the form of the food, its texture, energy density and how fast it can be eaten, appears to drive intake independently of composition. A protein fortification does not obviously fix that, and the new study measured a period far too short to test it.
So the defensible position is narrower than either camp wants. Processing is not a nutrient and should not be treated as one. It is also not nothing. Composition modifies the effect, and this trial is evidence for that, but a fortified product is still built to be easy to eat quickly, and that remains the part nobody has engineered away.
